Apple Overnight French Toast from Abbington Green
Prep Time: 20 minutes
Cook Time: 45 minutes
Yield: 4-6
INGREDIENTS
1 cup brown sugar
½ cup (1 stick) butter
3 apples (we use Honeycrisp). Cored, peeled, then sliced thin.
6-8 slices day old bread. We use brioche bread. Challah is another good option.
4 eggs
1 cup milk
1 tablespoon vanilla extract
1 ½ teaspoons cinnamon
You can use 2 tablespoons of bourbon in this. We usually exclude this.
INSTRUCTIONS
In a small pan melt butter and brown sugar together. Whisk to combine. Cook until slightly thickened. If using bourbon, add now and whisk again. Continue to cook for about 1 minute.
Pour butter mixture into a 9” X 13” pan. Arrange sliced apples on top of butter and brown sugar layer. Place slices of bread on top of apples.
In a large bowl, beat together eggs, milk, vanilla, and cinnamon. Pour mixture over bread.
Cover pan and refrigerate overnight. In the morning, place pan in the oven. Heat to 350 degrees. Bake for 45 minutes to 1 hour, until apple slices have softened, and bread is golden brown.
Notes:
If preparing in the morning you are serving, dip the slices of bread in egg mixture before putting them into pan. Pour remaining egg mixture over the top of bread slices, Bake at 3560 degrees for 40-45 minutes.
This dish does not need maple syrup. The butter/apple/brown sugar layer develops into a syrup-like layer under the bread.
